I have custom nat.hickory cabinets, and the walls are textured. What type of wood trim and finish will match?

The textured wall are next to a slick finish ceiling. They look terrible. It looks like we don’t know how to paint. We have attempted several different painting methods, and it still looks jagged. Now I am going to try trim. The cabinets are natural hickory, and I am going to buy trim from Lowes. What kind do I buy, and what type of paint/finish do I buy? Since they are natural, just clear?
