I have custom nat.hickory cabinets, and the walls are textured. What type of wood trim and finish will match?

The textured wall are next to a slick finish ceiling. They look terrible. It looks like we don’t know how to paint. We have attempted several different painting methods, and it still looks jagged. Now I am going to try trim. The cabinets are natural hickory, and I am going to buy trim from Lowes. What kind do I buy, and what type of paint/finish do I buy? Since they are natural, just clear?

Your question is very vague. Do the textured walls look bad or the slick ceiling or the edging between the two?
You could paint the ceiling, let it completely dry, and then tape it off with masking tape and paint wall. This will give you a very straight edge. Perfectly straight? No, but suitable for most people.
If you are unhappy with the transition between the two textures, then put up crown molding. There is a big price difference between the type you paint and the type you stain and finish. However, if you decided to paint, use a glossy enamel trim paint. If you are going to stain and varnish it, I would go with a natural stain and semi glossy or glossy. The trim at most home centers is made out of white pine; however, white pine with a natural stain will be very simular to the hickory, except there will be very little, if any, dark grain.
Hint: Paint or finish the trim before putting it up. That way, you’ll only have to do a little touching up once it’s on the wall.

At Lowes or Home Depot you can get white trim already painted it would be a pretty contrast with the fixture cover that you purchased to cover the old light fixtures. It would add warmth to the room & look cozy.
